Try "Quantifying Behavior the J-Watcher Way", a book by Daniel T. Blumstein and Janice C Daniel. It's an introduction to quantifying animal behavior with various approaches.

There are plenty of software options available. Noldus EthoVision and Observer are commonly used for such studies. I used EthoVision to great success in tracking zebrafish and anemonefish in behavioural studies with delineated "zones" and threshold areas in preference tests (you can define regions in the video feed however you want and it will record time spent and other metrics -- the software might even be able to mark and track multiple individuals at a time now!).

There are a handful of free options as well. I recall using some freeware that was originally intended for tracking of movement in athletes (for things like shotput and javelin, etc.).

Thank you everyone for your recommendations!  I've looked at the Noldus products before, but unfortunately they don't fit in my budget right now.  I'm looking into the other suggestions though, and I'm exploring a few possibilities.
