I was wondering if you could suggest me handbooks, chapters, papers, guidelines to write commentaries on articles published on scientific journals.
Moreover, to write a good commentary is it enough to focus on one paper or should I include more sources in order to comment more than one paper?

Look at RG comments, and try to differentiate between better and less satisfying comments. A comment is not a research paper. Here you should be able to go to town or to get to the heart of the matter at once, if possible with humor, not at all with loftiness. I don't think that this note you will find in hand books. Also newspaper comments give good exemples, journalists are professionals in this field.

Firstly, what do you exactly mean by book commentaries? As far as I can understand what you're talking about is writing a book review.
There is not a fixed way of writing such pieces of academic writing and the ways you should write such a commentary might vary depending on the journal you'll write for. Yet, I suggest you read some sample commentaries on books previously published in prestigeous journals. This way, you can at least get some insightns into how such reviews are written, what you need to include and how you can maintain critalicity in your eview, and such.

Have full command on language
Use your imagination to create movie of areas you want to write commentary
