1. 100mM of glucose is getting catalyzed in solution and end product is gluconate. Theoretically, how much pH change will happen if reaction is occurring in 100mM buffer of pH7.
2. If I want to check it by adding gluconic acid, any salt (K/Na) can be used?

1. pKa of gluconic acid should be around 3.7; chances are slim that at pH 7 there will much effect of equimolar gluconate. However, since you do not mention what buffer is used at pH 7, depending on its pKa, a change in pH is possible.
Theoretically, you could try Henderson–Hasselbalch equation to calculate the final pH.
2. If you want to check gluconic acid, it will not contain any Na or K. if on the other hand, you use gluconate (a salt/neutralized acid), either Na or K will do just fine.
