I would like my x direction to follow a curved path since the material properties follow a curved path. For example, if I have a curved beam with fibers in the direction of the curve, I'd like to define a property along the fiber direction (curved direction) instead of along the global x or y direction

It depends on which version you are using (MAPDL or Workbench).
in workbench you can define a new coordinate system and define the type as "cylindrical". then you can define a path running along the curved axis.
In MAPDL you have 6 default coordinate systems to choose from "follow the attached link"
