I am working on parboiled rice color. I am a new learner in this arena. Actually I have to calculate data based on three parameters, brightness(L), redness(a), yellowness(b) for measuring ΔE . There have lots o mathematical formula, I am confused that only for color measurement and calculating which formula should I use. In my lab CM-600d Portable Spectrophotometer (Konica Minolta) is available, but nobody don't know how to operate this.give me your valuable suggestion, please.....!

First of all, I would like to know what do you want to determine exactly? color? why are you interested on color? are you interesting in the fluctuation of each color (L, a, b) during storage period?
Related to which formula, the best you can do it is to check for recent publish papers in this topic and use the formula suggested for the author.

Using it is very simple. Just calibrate by covering the lens then long press the button after focusing the necessary place
Edenio Olivares Diaz sir, due to parboiled , improved the nutritional value and quality. but after parboiling creates discoloration which makes negative impacts to consumer to buy this parboiled rice.
I have to check the color before parboiling and after parboiling and will work on how to stop this discoloration through change the parboiling time and temperature.

Then, I think you just need to check in the user manual how to use in proper way the device and maybe you can obtain the right equation in the user manual (I have not look at the user manual) but sometimes you are able to find very important information on it.

Small particles are quite difficult to measure because you will get shadowing between them and this will influence the colour measurements. I think you can get different attachments for this machine and you will need to find out which is best for your product. Once you have found out the best way to measure your type of product, always measure your samples in the same way (same volume, in same vessel).
As mentioned by other people, checking the use manual will give you more information. Also, contact the spectrophotometer manufacturer. Konica Minolta should have some experts to advice you on measuring different product types.
Also, portable spectrophotometer are great for their size but may not be as precise as a full size spectrophotometer. Depending on how accurate your measurements need to be and if you can see a difference with the machine, you may need to invest in a larger machine.
Lastly, always trust your eyes. Measurements are great but people will always ask you: "but did it look different?". DE will not tell you the whole story. There is DE2000 but again it has its limitations. To keep records of how samples look, take photos under standardised lighting conditions in parallel to your experiments and take notes on how different the samples look. Keep the samples frozen to compare to each other at a later date if necessary.
Md ARIF Hossain If you want to improve the color during cooking you should know that the rice contains starch (a carbohydrate) and asparaganin (an amino acid) that when treated at high temperatures produce a reaction called maillard reaction, it is characteristic by the browning of the food, an easy way to avoid this process is with a vacuum cooker because at higher pressure lower cooking temperature for cooking and therefore the yellowish color will disappear. You have to keep in mind that most of the products that make this reaction synthesize acrylamide which is a genotoxic product. I hope it helps you.
