Friends, I have extracted lutein pigment from marigold petals and now want to encapsulate it in food grade polymers say maltodextrin and guar gum. but have got a problem. Lutein is insoluble in water but is soluble in organic solvents say THF (the one I used for extraction) but the polymers are soluble in water only. So how I should prepare the solution to feed into spray drier to get encapsulated lutein? Shall I dissolve the lutein in little amount of THF and make it up with water having food polymers dissolved? please suggest....also remember that the Max TSS for feeding solution should be atmost 15 %....
