I don't know the details for pancreatic lipase, but in my experience, enzymes are usually inhibited by DMSO at some level. The percentage by volume of DMSO at which inhibition starts to occur varies depending on the enzyme. Many enzymes can tolerate a few % DMSO by volume without significant loss of activity, and some can tolerate more. You can perform a simple experiment with your pancreatic lipase to measure the effect of DMSO concentration on its activity.
