Only if we know exact seq of the gene(s) involved in generating bitterness. I remember some bitterness in milk and Phe and Tyr are known amino acids giving bitterness. However you cannot remove of these Aa. They are the essential Aa consisting of the body cells. You need to know some other gene(s) that is dispensable!!! I do not think that such a gene exist in the olive plant. Let me know whether such a gene is already known.

The RNAi study you mentioned is not related to the knockdown of bitterness. The gene is just one of many genes involved in carbohydrate metabolic pathway, which could not be target gene to reduce the bitterness. As I mentioned, if you can reduce bitterness by RNAi, then the plant would not grow to make nice olive fruits since the gene may be an indispensable in the metabolic pathway.
