If you are talking about "glacial acetic acid", it does not mean cold solution but very pur product without trace of water.

If you want to understand why we cool reaction mixture, it is to avoid any increase of the temperature and eventually degradations or explosions...

And a mixture of ice and water is good to stay at 0°C. If you add sodiu chloride (NaCl) you can decrease the temp down to -7°C.
