For cases requiring hospitalisation, you can acquire statistics about the number of covid patients that have been recovered to the point of being released from the hospital. For mild cases, where a person has tested positive, but just has undergone self-quarantine, there may not be a second test to actually prove they have recovered.
I agree, esp. since the death toll often is due to comorbidity and the data is normally not paralleled with data from seasonal deaths due to other/ routine flu.
