Literature on the comparison of polyphenols between beer and wort and the change of polyphenols from wort fermentation to finished beer were not found.Can someone share relevant literature with me ?Thank you!

Hello, Polyphenols already occur in the early phase of the brewing process, during wort production. Polymerization of phenolics into polyphenols occurs during wort boiling, the fermentation process and, finally, during beer storage.
