the material of anode and cathode depends on the battery chemistry. For example if you would build a zinc bromide battery, one electrode will be zinc, the other a conductive inert element like graphite as bromine is highly corrosive. In case of a zinc manganese battery, you will again use zinc, but the other electrode will be for example conductive but almost inert titanium mesh, covered with manganese oxide (mno2).
