What proteins form stable dispersions in water, but hardly absorb water after severe desiccation?

At the moment I am searching for proteins that are dispersable in water. However, after drying such a dispersion, I demand that the protein hardly pick up water or dissolve again. Does anybody have experience with such proteins? Somehow I have the impression that they exist.
