TSS is combination of Acidity, Sugars and Other metabolites. In sweet tasting fruit when the TSS increases the acidity decreases. As Sugar is the main contributing factor for TSS. But crop like Acid Lime, where acidity is a major factor for governing TSS, where sugar% is very low. So what is correlation of TSS and Acidity in these crops like Acid lime, Lemon, Carambola etc. Does TSS increase with increase in Acidity or decrease with increase in Acidity ?
