SInce storage has no effect on minerals so you do not expect any change. The change you do find in refractive index, sugar profile and pH.

I agree with Mr. Jasim , there will be a change on vitamins contents but not minerals unless other chemical preservatives were applied. your applying cold preservation and definitely fruits need no chemical additives when they are preserved by cooling or freezing .
