Interesting work. I think the first you should do is to simplify the process accroding to your purpose. Maybe an existed evaporation model is useful to specify the boundary condition of the top.

but I cant find a model for surface evaporation in fluent. could I ask you to explain it more?

Fluent UDF can help you to achieve it, but the surface evaporation rate (model) you should get from the literature.
