Actually, CAS number (9012-76-4) is defined as chitosan (universally I think) and you should choose the molecular weight you want.

Take sigma-aldrich for example the same CAS number (9012-76-4) contains all different molecular weights and purity options.

I'm pretty sure if you contact the company you mentioned they'll give you the available options they have.
