I am working on proteolysis of caprine casein through cardosins A and B . The unavailability of raw material making more difficult to work with. So I have choose alternative as zingibain, which is also a protease but not working good in crude form. So is there any other easily available source for cardosins A and B.
Cynara cardunculus is reported to produce these compounds.

Actually I have this paper this plant is in sunflower family and difficult to find in India.
There are this plants, Carica papaya (papaina), Ananas comosus, latex of Ficus carica, Calotropis procera and Galium verum. There are another plants, but are not enzimatic ( like Rumex acetosa).
