Again, your question is really not very specific. Which types of cells? Do you wish to compare different cell types or are you asking for differences among the same cell types? What do you mean by behavior? Gene expression patterns, cellular morphology, migration, proliferation, apoptosis, etc. ; what exactly do you wish to measure? There are many kinds of stress; Genotoxic stress (cisplatin, taxol, etc.), DNA damage (UV light, radiation), reactive oxygen species, hypoxia, etc.
The short answer is yes, even homogenous cells in culture will respond differently stress such as low dose radiation, some will die, others will repair their DNA and survive.

So, the acceptable measure of chronical stress could be the length of telomeres (for single cell- TL) or product (TLxN), where N is stem cells number (for tissue, organ, subject).
