The ANSYS FLUENT User guide in Multiphase flow and phase change sections will help you a lot. There are two common models, Schrage and Lee model for phase change which you can use for your simulation. You can get the formulation from the User guides.
The Fluent Theory Guide will give you suggestions on which model to pick.
Below is just copied from the theory guide, page 628 of Release 18.0.
17.7.5. Evaporation-Condensation Model
ANSYS Fluent uses one of two models for interphase mass transfer through evaporation-condensation.
With the VOF and mixture formulations the Lee model is used. With the Eulerian formulation, you can choose between the Lee model and the Thermal Phase Change model.
