If you isolate bacteria from a water source during the winter, do you need to incubate at current temps?

I'm starting a seasonal research project where I'm isolating bacteria from a water source. I'm curious if I collect water right now and isolate bacteria, do I need to set the incubator at the current air temp or can I incubate at higher temps?
