Preparation of the microencapsulation matrix: the matrix is the material that surrounds the antioxidant extract and protects it from the external environment. The matrix can be made of different materials such as natural or synthetic polymers, lipids, proteins or polysaccharides.
Preparation of the antioxidant extract: the antioxidant extract is generally prepared by extraction from natural sources such as plants, fruits or vegetables.
Formation of the microcapsule: the matrix is generally dissolved or dispersed in a solvent, then the antioxidant extract is added and the mixture is agitated to form droplets. The droplets are then hardened to form microcapsules.
