For gender I have recoded into 1 and 2, I'm assuming mean and SD is the best fit
For age I have recoded into two groups below 35 and above 35years. Is a median the best fit for this?
For religion there are four groups, would only the mode be appropriate for this variable?
For gender it is only appropriate that you report the mode, or just report the number or percentage of males/females. In most circumstances, leaving age as a ratio scale of the actual ages would be best and then to report the mean and SD, but as you have codes it, again the mode or just the number/percentage of each of your two age categories is best. And yes, for your four categories of religion, the mode or again, number/percentage of each is best. In short, same answer for all three as you have have described you data.
