I'm testing if particular plant and mushroom extracts inhibit the BACE-1 enzyme from cleaving APP, and I'm not sure how to make the extracts.

I would ideally like to test polysaccharides.

All of my plants and mushroom samples are polar, so I think I should use some type of alcohol, but I'm unsure of which one and which process.

How do you make extracts of mushrooms compared to plant samples (like roots and leaves)
