I want to use NDGA solution to treat fruit. But it is insoluble in water, how to dissovle NDGA ? I have found it is soluble in ethonal, DMSO, but ethonal properity is harmful to fruit, and effect of DMSO is not clear. your any suggestions will be appreciated.
(1) Did you try increased pH? I would suggest using just regular water at increased pH. This acid is a kind of polyphenol, and includes two catechol rings, and I suppose that pK is the same as in the catechol, around 9.5. This means that pH 9-9.5 could be sufficient. At pH 9.5, 50% will be ionized, and the ionized form is well soluble. So, perhaps, even pH 9 will be Ok, and it can be tolerable for fruit treatment.
(2) another way is using ethyl alcohol (but not methyl alcohol!) or, more correctly, water containing additions of ethyl alcohol, e.g., 5-10%?
(3) the combination of the two above means may be crucial. If using 1-3% of alcohol in water, it will not be deteriorating for fruits but will disrupt any hydrophobic effect in water which is responsible for reducing solubility of NGDA (having a significant hydrophobic molecular surfaces). Increased pH will convert it to more soluble ionic form.
(4) you may try using some FDA-permitted surfactants, even of a natural origination, and they will solubilize your acid.
