Can anyone recommend a DNA extraction method, preferably without the use of a kit, that reliably extracts 'total' yeast and bacterial DNA from non-dairy fermented beverages? The beverages in question have approximately 3-5% sugar, 1-3% alcohol by volume, exopolysaccharide from bacteria, and trace plant components (e.g. cell wall debris, proteins, etc.). I am looking to monitor the fermentation community of kombucha during industrial fermentation via amplicon-based metagenomics.
