I would advice the books by the late Tharwat Tadros, who wrote many books on the topic of colloidal systems, dispersions, emulsions. Just google his name. One that pops into my mind is this one.

Colloid Stability and Application in Pharmacy - Colloids and Interface Science (VCH) (Hardback)

Tharwat Tadros was a great scientist, teacher and instructor and his many years in industrial R&D he nicely summarized in his books. Detailed, yet understandable.

I recommend you the book "Aulton's Pharmaceutics: The Design and Manufacture of Medicines". There you can find basically all the conventional pharmaceutical forms.

I think good information can be found in 'Encyclopedia of Pharmaceutical Technology'. Also, Sprowls' American Pharmacy has good information about this dosage form.
