I dried tomato samples in a hot-air dryer, varying the air temperature at 3 levels, 45, 55 and 65oC. Result obtained showed that samples dried at 45oC had the lowest colour difference as expected however those dried at 55oC had colour difference which was a little higher compared with those dried at 65oC. what could be responsible for this unusual behaviour?
Unusual behaviour might be human errors. Technically, the effect of drying temperature on your samples' colour should follow the incremental order. How many replicates did you implement in your experimental design? Did you use the same batch of tomatoes for all the experiments? Different batches of tomatoes might have separate composition profiles which could lead to irregular thermal behaviour.
Thanks for your contribution @ Dr. Adewale your suggestion was the exact thing that was experienced. I used 3 different varieties of tomato fruits and I realized that was the reason for the unusual behaviour, the reviewer of my paper later accepted this explanation to publish my work.
