OpenFOAM is the leading free, open source CFD software operates on Linux kernel operating system. Nowadays this software is the most widely used free CFD package. However, its learning resources and theoretical descriptions are quite limited. Can anybody help me find reliable and complete resources for OpenFOAM software's theoretical and mathematical background?
Particularly for details on the numerical aspects of the solvers of "Hybrid VOF-Eulerian Multi-fluid Methods" such as multiphaseInterFoam, multiphaseEulerFoam, and interMixingFoam which are addressing multiphase flows with more than three phases.
The best available resource for openfoam is the following. It is a collection of multiple lectures delivered to MS and PhD students at Chalmers university. You will also find the codes developed by postgraduate students during their thesis or projects.

The best reference book to learn the implementation of OpenFOAM code is "The Finite Volume Method in Computational Fluid Dynamics, An Advanced Introduction with OpenFOAM® and Matlab" by Moukalled

It is not precise for you to say "developed primarily by OpenCFD Ltd since 2004".
OpenFOAM started around 1993.
You can see it from Professor Jasak's thesis: Jasak, H., 1996. Error analysis and estimation for the finite volume method with applications to fluid flows.

OpenFOAM is being developed by a large number of scholars in these years, not limited by primarly OpenCFD Ltd as you say.
