These indicators are normally included to show that there is a pH change caused by the reaction of the bacteria when grown in the selective media. So you can substitute for other indicator dyes. If you do a quick search on the varied assays you want to use then they normally tell you the % dye to add, it is usually quite low. If you cannot find this then let me know and I can check in the lab for you.

Yes, these dyes normally act as pH indicator in the medium which show change in colour as a result of metabolism of microorganism. So, you can use Bromophenol Blue as well.
The percentage of Phenol Red indicator in Urea Broth is 0.0012.
