How can we differentiate between D2D communication and Adhoc networks?
I am also wondering what D2D covers what ad hoc networks haven't covered yet ?

-D2D is just a link.
A USB (universal serial bus) or HDMI cable can link two devices, and that could be already device to device communication, WITH NO INTERMEDIARY.
-ad-hoc networking may be symmetrical to this "naked" link: as a prisoner escaping their jail may tie up one cloth or sheet to the next and so on, until it's long enough to reach the bottom of the wall... And bear the weight of the escaping prisoner, with the chain of clothes tied to the bar of the cell window...
Ad-hoc means using whatever is available, opportunistic is another qualifier meaning that it serves your purpose.
Remember why Internet was created, as Arpanet? Something robust to war-time conditions, carrying a message forward, as soldiers in WW1, always forward... Of course we see the limit today of the "forward" approach, forgetting path and origination at times, and building the rationale for distributed ledger technology ( also known as Blockchain) which "keeps track" in an authentic and unfalsifiable (tentatively) way.
Imagine you are on a car, in a long traffic jam of cars c1 to cN, and you are cN. Assume that you are out of network coverage (whatever radio network) but c1, far away, happens to be on the other side of a hill and under coverage.
You build a chain through all volunteering cars cf(i) i=1...m, with f(1)=1 and f(m) =N.
If it can be done, you have an ad-hoc networking path to coverage, relayed by all intermediaries and finally car1, granting you access.

In short, two different topics. Device to device communications can be as narrow as two walkie-talkies on a given channel, or a hard wired connection between two devices, or ultimately even two devices communicating over a network. The focus is on how the two devices intercommunicate, not the network itself, assuming a network was even involved.
An ad hoc network is a self-organizing network, meaning, a network which forms itself from multiple nodes, without a pre-established infrastructure being in place. The focus is on the self organization of these random nodes, rather than on the communications between two specific end systems. The two most common types being, at layer 2, such as IEEE 802.11 ad-hoc mode, and at layer 3, such as MANET (RFC 2501 etc.).
