I'm using DMEM medium. I need to order some fresh adrenaline but there are few forms and salts of it, like hydrochloride, bitartrate and etc. Does it make a difference only in terms of solubility? What epinephrine should I order and how to improve the stability while working with it? Thank you.

Epinephrine base is not a good choice to purchase since it undergoes an oxidation reaction when exposed to light or heat. Epinephrine salts such as Hydrochloride or Bitartrate are recommended since both are soluble in DMEM medium and stable upon exposure to light or heat. Once you are working with solutions of epinephrine or their salts you should avoid heat and contact with light. It is recommended to cover the system with aluminium foil to avoid any oxidation reaction.

How about using ascorbic acid? I have heard that people use it to improve norepinephrine stability, would it be sensible to use with any epinephrine salt? Thank you.

Ascorbic acid is a reducing agent (antioxidant). It will be a good idea to utilize it to inhibit any oxidation of the ephedrine. However, you should check if its has any negative effect on your results.
