I am interested in using a chitinase to degrade chitin in cell wall fragments (AIF) isolated from Aspergillus fumigatus. In this insoluble structure, chitin is covalently bound to beta-1,3-glucan and galactomannan and I want to degrade chitin without affecting the binding capabilities of either of the other components.

I have tried both chitinases currently available from Sigma-Aldrich Co. without success. What are your experiences using chitinases to degrade insoluble chitin bound in a structure?
