Arjun, in addition to SSI's publications Barbara Byrne's book (Structural Equation Modeling With Lisrel, Prelis, and Simplis: Basic Concepts, Applications, and Programming) is a valuable resource for learning LISREL as it provides clear explanations of the syntax and output files.
Now I do research in SEM, then I am using the book from SSI Science Software which is the original CD for Lisrel. The authors of the book are Karl Joreskog, Dag Sorbom, Stephen du Toit and Mathilda du Toit

Some of my students do selflearning after Multivariate analysis course (linear models) with R.B. Kline - Principles and Practice of Structural Equation Modeling, Guilford Press 1998 with noticable success.
It is easy writen book appropriate to beginner with adequate knowledge of linear models.
After that, especially for psychological research I'd recommand Timmothy Brown's Confirmatory Factor Analysis for Applied Research, Guilford Press, 2006.
I would recomend Byrne's book as an starting point. It is clear and simple. Unfortunatedly it gives little insight on the equations supporting estimated models. Brown's book goes into much more detail.
A few more chapters on the topic can be found in the book by Schumacker, R.,E., & Marcoulides, G.A., "Interaction and Nonlinear Effects in Structural Equation Modeling", 1998.
