The only available phosphate buffer that we have is at 7.2 pH, however, 6.8 pH is the ideal buffer to use according to our model paper. Would it make a big difference if I use the 7.2 pH phosphate buffer instead?
or are they ways where I can shift 7.2 pH to 6.8?
The difference in pH might have an effect, although it depends on the nature of the inhibitor and its interaction with the enzyme. You can adjust the pH of the phosphate buffer downwards by adding a small amount of concentrated acid: phosphoric acid, if you want to limit the buffer to phosphate, or hydrochloric if you don't mind adding some chloride. You should do the pH adjustment by adding the acid dropwise while monitoring the pH with a calibrated pH meter.
If you make separate solutions of monobasic sodium phosphate and dibasic sodium phosphate, you can mix them together in a specific proportion to make a pH 6.8 sodium phosphate buffer:
