Interferogram generation is done on a TanDEM-X pairs in CoSSC format. Can I now calculate the phase standard deviation and make assumptions how accurate the interferogram is over a specific (distributed) target? Additionally, how does multilooking of the interferogram and different coherence windows affect this accuracy?

Tough question indeed, and to be honest I do not have exact answer to these question. And I do not have any experience with TANDEM-X either. But I have some experience with coherence. Basically, if coherence is quite low, generated fringe is in doubt. So, man made structure should have higher coherence. But, in many case of mine, especially when I have observed in rural housing, the coherence over houses may be persistently low. So I guess, you should consider on what target is being investigated.

Thanks for your answer. More background information: We monitored a maize field, low coherence is not a problem, the big advantage of single pass interferometry is a generally higher coherence even over targets that show temporal decorrelation, such as plants. It is only one signal that is recorded from two antennas. I would like to quantify the theoretical height error and compare to the values we have measured over the maize field.
Any more thoughts on the issue are very welcome,

For such case, tandem configuration is much better. I did height estimation using repeat-pass, but I think the configuration is not likely usable for agriculture (I did for rice fields). Another issue I encountered was a model developed at certain age (say in mature one), may not be applicable for younger plant. So if you have access to several phase (in that field, or in the vicinity) it would boost your research.
It would be interesting at this moment for you to calculate the height (with any reasonable method) and see if it is comparable to ground data, say TanDEM-derived DSM vs ground-masured height. So, basically I want to suggest learning from your data, then revise.
