I have dissolved the DOPC:DPPC lipids (1:1) in chloroform and mixed with 1 wt % dye molecules. I deposited the lipids over mica substrate using spin coating method and observed the spin coated film under the fluorescence microscopy. I got the attached images.
I am wondering is it mixture of lipids which are making dendrites over the mica? Can lipids form this kind of texture over mica? If anyone have idea!!

Your lipid might be interacting with dye molecules due to hydrophobicity and making such assembly. Plz go through the following article, it may help you-

You have mentioned the lipids domain formation at air-water interface. Using that, we can control the domain shape from fluid to condensed state. But I have used spin coating method. May be in such case, the concentration, spinning speed, volume of solution added to substrate, interaction between lipid and substrates, these parameters are major factor for different shape domain formation. But that's true, texture should be more/less same in both case for particular lipids mixture. Yes, fraction of DPPC could also help to find less condensed lipids state.
