Sugarcane juice is generally consumed fresh as it turns brown withing short time period ( withing an hour or so). Is there any other way to keep it fresh for longer time rather than adding chemical preservative?
Pure sugarcane juice is highly alkaline and due to it's high complex carbohydrate content it breaks down quickly much like the inside of an apple after you cut it. On the other hand, when citrus or something acidic is introduced it slows down the oxidation process thus retains the original color. Which is better? If you want pure sugarcane juice it is best consumed right away or frozen and consumed later. if you want to carry it around for a while or enjoy it stored in the fridge for a few days then it is better with calamansi or lime to preserve it longer. The good news is either way sugarcane juice is incredibly healthy and delicious and is even safe for most diabetics.
Enzymatic browning sets in when the juice is extracted. It would be important to quickly refrigerate the juice at very low temperature and slow down the oxidation process.
