In any (electrically) conducting closed loop an electric current is induced when the magnetic flux passing the area enclosed by that loop is changed.
This is also valid for a closed gold pattern loop on top of a glass slide irrespective of its shape.

Yes patterned gold on a glass slide can be used as an inductor. Typical shapes involve either a single loop, multiple concentric loops or square spirals. Remember, the more arms you have in the spiral the larger the interwinding capacitance will be. This makes it more like an LC circuit and it will resonate at a frequency of 1/sqrt(LC). Typically thicker gold patterns will yield a higher quality factor and sharper resonance because the resistance of the coil will be low. If you use lithographic electroplating, you can deposit 5-10 um thick gold for a strong signal.
