I don't know much about extraction of DNA from honey . I think your you can go for enrichment of bacteria by inoculating plates or broth with honey. than after pelleting out bacteria you can go for DNA extraction .
I assume you are looking at getting the DNA from bacteria contaminating the honey you could go in the direction provided by @ Prakash Chandra. However, if you are interested in DNA produced by the bees that produce honey first you need to remove your bacteria without lysing them especially via physical filtration with Millipore 0.45 nm after dilution with sterile non-DNA based water. This removes your bacterial contaminant then you can apply ultracentrifugation method to extract the 'naked ' DNA in the honey.
