When I run my experiment, I connect my setup to a data logger system that records current generated within a given interval. In some literature I have found that variable resistors were also connected. Can anyone help me understanding this concept.

Yes variable resistors are required to conduct polarization of MFC. During polarization, the effect of varying external resistor on voltage generation is studied. You can also refer Logan's Book on MFC.....
Thank you Deepak, but how do i decide what Rext i should give, how do i get to know weather to give 1000 Ohms or 100K Ohms...?

You need to apply variable resistors to perform polarization of MFC. Their are plenty of publication on polarization studies.
However you need to work out with different range of external resistance (eg. 50 Ohms to 50,000 Ohms, but generally 50 to 15000 Ohms is sufficient). With this, you can find out your system sustainability and suitable external resistance range. Still if you need more clarity, you can use 50, 100, 200, 500, 1000, 2000, 5000, 10000, 15000 Ohms as external resistance for Polarization at initially. With this process, you can find suitable resistance with respective of voltage drop (due to electron flow) region fron the above external resistance values.

You must find the internal resistance of the mfc.This is done with the polarisation curve method i.e. plot voltage vs. current at various external resistances.the slope of the curve is the internal resistance of the mfc.This must to be known because the power delivered by an electrical source(the mfc in this case) is maximalised if the load resistance is equal with the internal resistance .
