I'm relatively new to this coupling reactions so studying details of the reactions.

I just wonder why we need to cool down the mixture of DMAP/carboxylic acid/alcohol or amines to zero degreeC before adding EDC or DCC and gradually warm it up to RT. Some articles say DCC was added just at RT, some say it was added at 0 C and reaction done at RT.

I have seen many people recommend to cool the mixture down if you want to improve the yield of the coupling reaction and I have a not very clear supposition related to a side reaction, but couldn't find the exact reason or mechanism behind it.
