In an experiment I found that the fresh weight of the root was less than that of the stem, however when I found the dry weight, the weight of the stem was less than that of the root. Why are these differences?

In my opinion, this is due to the differing physiological composition of the shoot versus the root tissue. Also, the roots may be suberized, while the shoot part of the plant is more succulent.
Fresh weight is the weight of a plant when you harvest it. Say if you harvest a tulsi plant and weigh it as such in the balance.
Dry weight is you keep this plant for shade drying and weight it after 2weeks, 3 weeks, 4 weeks till there is no.more change( decrease ) in weight ( moisture free).
I think imbalanced fertilization might be the cause. Higher doses of nitrogen compared to phosphorous and potassium leads to tender growth of the seedlings which contain more water and less dry matter accumulation.

All plant biomass contains some water content in the tissues due to biological process. There is diffeerence always found in fresh weight and dry weight. Many exoitc plants are given expression different in fresh weight/dry weight. Plant conopy played major role in the evaporation on leaf area.
