I'll offer a hypothesis. By using UDP-sugars as substrates for most glycosyl transferases instead of ADP-sugars, the possibility of cross-talk or interference between metabolic enzymes is reduced. ADP sugars might act as competitive inhibitors of some of the many enzymes that use adenosine nucleotides as substrates.
