Please correct me if I am wrong that if we don't saponify the lipid than we can only make esters of free fatty acid and so can analyse only those in GC.

Saponification is basically hydrolyzed all bounded fatty acids (such as triglycerides) and make them available for esterification. So If I need to profile all fatty acids, I should go for saponification.
