Getting pectin to form nice crystals is not easy so there is not much data. Walkinshaw & Arnott J Mol Biol 153 (1981) 1055-1073 and 1075-1085. The IFR people also did some work on oligogalacturonates in the late 1990's, that is Carb Res 328 (2000) 235-9.
