You need a post harvest scientist. Looks like tissue breakdown. Is a Ca or B deficiency possible?
This is important what variety is it...
NO Nitrates.... might be excessive fertilizers... I think No disorder too .. The some of newer varieties of tomatos has this feature - this is variety issue... Newer hybrid varieties to produce firmer fruit develop this type of white centers or sector. it increasing of shipment ability and storage..... old varieties which have more juice pulp - never has this problem...
