I would recommend 'Sample survey methods and theory' by Morris H. Hansen, William N. Hurwitz, William G. Madow, especially volume 1 for those who start doing it.
Oualid, you haven't made it very clear what you are looking for. For an introductory text, I would look to Floyd J. Fowler, Survey Research Methods, latest edition is 2008. A classic just on sampling is Leslie Kish, Survey Sampling (1995). These are common books, so they should be easy to get. Amazon.de has both.
That's a pretty wide set of books. For a quick sampling review, Kalton's little green Sage book is great. I still love Kish (some of my colleagues don't), and Lohr's textbook is really well-designed and easy to understand. If you want survey research design and methodology more broadly, I'd second Fowler for a general overview of survey research and some how-to (but not for sampling). Groves et al (2007) "Survey Methodology" is probably the best soup-to-nuts overview, but not a how-to book.
