Stability can vary widely among compounds of the same class. For example, lignin, the most abundant phenolic compound, is among the most stable natural compounds and can easily withstand temperature of up to 200 degree Celsius, while anthocyanins, also phenolic compounds, are readily oxidized and degraded at 40 degree. Caffeine and morphine are both alkaloids, but the former can be stored for several years, and can withstand brewing with boiling temperature, while the later has a shelf life of around 6 weeks to 3 months.
