Very interesting question and a good project. Unfortunately I have no convincing idea. I hope others have those. Chitosan is a very simple-looking substance (on paper). In reality, it is imbedded in a lot of protein stuff. So it is not easy to ascribe any effect unequivocally to chitosan itself, as soon as you start to work with chitosan from fungi and not with the normal but unphysiological deacetylated crab-shell chitin. I am interested to learn what you find out. Good luck!

Chitin oligomers, if you can find them (japanese chemical companies?), elicit different phenotypic response than chitosan. Beta 1->3 glucan (Laminarin, sigma L9634) might be worth trying.
